Halffernented oolong teas are particularly sought after because of their strong smell and taste delicious. The whole tea leaves are collected at the precise moment of full maturity. Picked tea leaves to wilt soon leave, partially oxidize and then scroll and dry. The length and the way the whole process is then essential for the final quality, taste and aroma of oolong. So we can meet different tea strong, twisted and smell and taste very different.
